Long ago the Ancient Greeks recognized their standard of cooking as an important art form thus inspiring Archestratos, in 330 BC, to write the first cookbook. The area of ancient Greece now known as Southern Italy and Sicily has often been referred to as Magna Graecia (Greater Greece). This is because many cities of Southern Italy and Sicily were founded by ancient Greek colonists beginning in the 7th century BC. Greek gastronomy would grow to influence many of the Mediterranean cultures, including the Romans who hired Greek cooks for their kitchens and Greek cultural tutors for their children. As a result, Southern Italy's cooking and culture was greatly influenced by the Greeks
Another way the Greeks later influenced gastronomy is with today's famous, white chef hats. The talented cooks in the kitchens of the monasteries of medieval Greece created their own white version of the tall, black hats worn by the monks.
